We joined Musa Cooks, Madu for the intimates, also mother, friend and chef of the most beloved of TH, for a special series of recipes for Mother's Day.
We started with three appetizers - beautiful to look at, delicious to eat and easy to prepare, like everything that Madu teaches in her classes.
01 | Squash Carpaccio
Ingredients

1 squash in thin slices
-
1 burrata
-
Basil or parsley leaves
-
Lemon zest
-
Black pepper
-
Sauce: Sicilian lemon + olive oil + salt
To Serve:
Arrange the squash on the plate, shred the burrata on top, add the leaves, the raspings, the pepper and finish with the sauce.
02 | Feta & Cherries
Cut the feta cheese into cubes, place fresh cherries and finish with olive oil.
Other combinations we love: cheese + olives, or feta with melon and cucumber.
Simple, fresh and with perfect look (we used our new Terra Rosa table for this Mother's Day)
03 | Melon, goat cheese and parma
Ingredients

Balls of melon
-
Goat cheese type chévre
-
Parma ham
-
Basil leaves
Finish with olive oil.
Serve with salt and pepper on the side.
It's great to substitute the melon for peaches and goat cheese for buffalo. We also love it with arugula.
