The BBQ Edit
We created a guide to side dishes we love for one of our favorite moments, when the day changes rhythm.
After all, holidays and weekends are the days that call for a delicious barbecue at home.
ASPARAGS ON SMOKE
WITH CREAMY LEMON RASPBERRY
The intense heat makes the tips slightly crispy while the interior remains tender. Finish with olive oil, sea salt and plenty of lemon zest, more for the aromatic notes of the peel than for the acidity of the juice.
BEETROOT ON SMOKE
WITH CREAMY LEMON RASPBERRY
It becomes sweeter, more concentrated and lightly smoky. The ideal contrast comes from the creamy, acidic and salty goat cheese, and fresh mint, which prevents the dish from being heavy.
Serve the beets in large pieces, almost rustic, with the cheese broken up on top, mint leaves and a good drizzle of olive oil.
To finish, a few drops of balsamic vinegar or red wine vinegar.
ERYNGII MUSHROOM
WITH CURSED EGG YOLK
One of our favorites.
The eryngui has a almost meaty texture and responds especially well to the grill. Cut lengthwise and grilled until golden, it gains toasted edges and a deep flavor.
On top, grated cured egg yolk, almost like parmesan, adds saltiness and umami.
A little chives, olive oil or a few drops of sesame oil are enough to finish.
The result is a side dish that could easily be the star of the table.
ZUCCHINI WITH
MISSÔ SAUCE
Right on the grill, over high heat, it gains a toasted surface and loses much of that texture that usually divides opinions.
The sauce is the counterpoint: missô, a little lemon or rice vinegar, olive oil and, if you want, a hint of honey.
Salty, acidic, slightly sweetened.
ROASTED CAULIFLOWER WITH
TAHINI SAUCE
One of our favorites.
On the grill, it's best served in large pieces or even whole, allowing some parts to become really toasted.
The tahini sauce brings creaminess: tahini, lemon, cold water and salt until you reach a fluid texture. On top, fresh herbs, seeds or toasted nuts.

The side dishes can arrive at the table gradually, as they're ready.
